A commercial oven doesn't have to be perfect — it has to be predictable. When an operator calls us saying it's time for a new range, most of the time we can point to two or three components that will bring the unit back to spec at a fraction of the replacement cost.

Here's the framework we use: if the frame, cavity, and gas supply are sound, we can almost always repair. Thermostats, ignitors, gas valves, convection motors, and door hardware are all replaceable. If the cavity is compromised or the burners have failed structurally, replacement starts to make sense.
